Plain Dosa

Dosas are available in many varieties and one such is plain dosa also known in south India as saada dosa, 'saada' meaning plain. Any one would enjoy this dosa, just a need of spicy chutney to accompany with. Yesterday night it was dosa mela, I tried making 2 varieties out of the same batter which I prepared early morning. I love uthappam kind of dosa and Mr S is like 'o please make for me saada dosa and chutney'. My brain worked and I decided to satisfy both the needs. And I could manage preparing both plain dosa as well as Tomato Onion Uthappam. Here I share the recipe to make this simple dosa batter.

Ingredients:
Raw rice-2cups(I used sona masoori rice)
Udad dal/Split skinned black gram-1 cup
Methi/Fenugreek seeds-1 tsp
Cooked rice/Beaten Rice-1-2 tbsp
Ghee/Oil to smear on dosa
Water as required

Recipe:
  1. Clean and soak raw rice, udad dal and methi seeds in water separately for 4-5 hours.
  2. Grind raw rice initially and make to a fine paste using enough water, no matter if you can feel the tiny particles. Make sure that it isn't coarse.
  3. Once done grind udad dal and methi seeds together to a fine paste using water as required.
  4. Add it to the ground rice mixture and mix well.
  5. Allow it to ferment overnight or atleast 10-12 hours.
  6. Add salt and mix the batter well.
  7. Pour a ladle full of batter on a hot non stick griddle or non stick tawa, spread it thin and cook uncovered initially till you get to see pores forming on the top of the dosa. Now cover and cook for 1-2 minutes on a high flame.
  8. Remove cover and apply oil or ghee on top and take it off to the serving plate. Do not flip and cook other side.
  9. Plain dosa is ready to go with coconut cilantro spicy chutney!
