Fusion Sambar with Mexican Veggies

No wonder I do heights in experimenting within kitchen but yes many times they turn out to be heavenly delicious. And one such awesome creation is this fusion sambar. Yesterday was the second time I prepared this. Got this idea from my better half. He suggested me to try out using these mexican vegetable mix in it. It is superfast and easy to make sambar. Could be a best and easy ones for bachelors too. This sambhar doesn't need any grinding. Usually when we tell sambar people think it involves grinding coconut for the gravy and all, but hurray this doesn't need all that.Here I share my fusion sambar recipe.

Ingredients:
Frozen Mexican Vegetable Mix(Containing red,yellow,orange and green bell pepper, red kidney beans, beans,baby corn,sweet corn)-2 cups
Onion-1 chopped thin lengthwise
Green chillies-1-2 slit lengthwise
Masoor dal/Red lentils-1/2 cup
Turmeric powder-1/2 tsp
Coriander powder-1 tsp
Sambar powder-1 tsp(Any brand would do, I use MDH Sambar powder)
Dry coconut scrapes-2-3 tbsp
Curry Leaves-1 sprig
Coriander Leaves-2 sprigs
Water-3 cups
Oil-3 tsp
Mustard seeds-1 tsp
Cumin seeds-1/2 tsp
Salt to taste

Recipe:
  1. Thaw the frozen mix vegetable mix
  2. In a pressure cooker add oil and when hot add mustard seeds,cumin seeds.As they splatter add onions and green chillies and saute well.
  3. Now add turmeric powder,coriander powder and mix well.
  4. Add thawed vegetable mix to it and saute well.
  5. Now add masoor dal/red lentils.
  6. Add salt and mix well.
  7. Add 1 cup water and pressure cook till done.
  8. Transfer it to another deep bottom pan.
  9. Now add remaining water,salt if required and sambhar powder to it and mix well.
  10. Add coconut scrapes to it and mix again.
  11. Cook till you see boiling bubbles in the sambar.
  12. Now remove it off the stove and add curry leaves,coriander leaves and mix well.Easy and super yum fusion sambar is ready.Enjoy with hot rice and ghee/clarified butter.
