Kesar Badam Kulfi

With the onset of summer here I have a kulfi recipe for all.A popular frozen dairy dessert from the Indian Subcontinent. It is often described as "traditional Indian Subcontinent ice cream".
Traditionally it was made by evaporating sweetened flavoured milk cookin slowly and stirring continuously. But now many versions are available.I have one version for you all
Simple yet delicious kulfi recipe is here.

Ingredients:
Almond powder-2 tbsp
Powdered Sugar-1 cup
Milk powder-1 cup
Whole Milk- 1 cup
Corn flour-1/2 tsp
Water to dissolve corn flour- 2 tsp
Chopped almonds,cashews-2 tbsp
Saffron/Kesar- few strands crushed
Cardamom powder-1/4 tsp

Recipe:
Bring milk to boil in a deep bottom pan with continuous stirring.
Add milk powder,almond powder and sugar in a bowl and mix well.
Now slowly add it to the boiled milk with continuous stirring.
Now in a bowl mix corn flour and water.Add that to the boiling mixture and stir well.
Boil for some time till the mixture thickens a bit.
Take the mixture off the stove and add chopped nuts, crushed saffron and cardamon powder to it.
Mix well and let it cool.
Now pour them in kulfi moulds and deep freeze for 6-8 hours or over night.
Remove the kulfi off moulds and serve them with your desired chopped nuts.
